Polly-O Parmesan Antipasto Salad

A wonderfully fresh and tasty salad makes any lunch or dinner a meal to savor. Adding homemade dressing and a touch of cheese only raises the bar on deliciousness. Here, the chefs at Polly-O, crafters of traditional Italian cheeses since 1899, share a recipe for a simple and savory salad the whole family is sure to love. So, who is ready to eat?

Salad Ingredients
4 cups Romaine lettuce, chopped
½ pound salami, chopped
1 cup artichoke hearts
1 cup grape tomatoes, halved
½ cup Pepperoncini peppers, chopped
½ cup Olives, chopped
½ cup marinated red peppers, chopped
5 oz. Polly-O Parmesan, shaved, shredded or grated

Vinaigrette Dressing Ingredients
½ cup Extra Virgin Olive Oil
¼ cup red wine vinegar
1 tsp Dijon mustard
½ tsp oregano
¼ tsp red pepper flakes
Kosher salt
Freshly ground black pepper

Instructions
• In a large bowl, toss lettuce, salami, artichokes, tomatoes, pepperoncini, olives and red peppers together.
• Prepare the vinaigrette salad dressing by combining all ingredients together and season with salt and pepper.
• Dress salad with vinaigrette and top with Polly-O Parmesan cheese. Serve immediately.
